Toasting to health with a flute of imported bubbly takes on a whole new meaning at Montage Resort & Spa in Laguna Beach, California. But, while the bubbles tickling your nose may come from France, Italy, and even Transylvania, they rise not from champagne, but from sparkling H2O.

The waters (21 in all, including 5 sparkling and 16 still) are part of a signature nonalcoholic drink menu developed for guests who want to extend the resort's holistic spa experience beyond sumptuous mind and body treatments to include the pleasures of the palate.

The menu, which is offered in Montage's Lobby Lounge and three notable restaurants, also features berry and herbal elixirs (jasmine, gentian, and limeflower), artisan soft drinks, and unfermented winery juices. For the perfect prelude to resort chefs James Boyce and John Cuevas's health conscious cuisine, an alcoholfree Pomegranate-Lime Cosmo with a splash of elderflower juice is served "straight up" in a martini glass, while a Ginger-Mint Cooler is presented "tall" over ice. A few premium nonalcoholic wines from California are also available to sip while you sup.

And with more people craving a healthy lifestyle beyond the spa, the concept is going places, showing up at restaurants like Thomas Keller's famed Per Se in New York City, where a nonalcoholic drink-pairing menu is creating a buzz (without the buzz).

pomegranate-lime cosmo 2 ounces pomegranate juice 1/2 ounce ginger ale 1/2 ounce pineapple juice 1/4 ounce lime juice 1/4 ounce elderflower juice Lime wedge for garnish

Shake ingredients with ice and strain into a martini glass. Garnish with lime wedge.
